Why mixed dal beats single dal

Cook one lentil and you get one texture. Cook five and they layer: masoor dissolves into a thick base, chana stays firm and nutty, moong turns soft and mild, urad adds body and a faint richness, toor pulls it all together.

It's also a more complete plate. Different pulses bring different amino acid profiles, so a blend gives you a broader spread than any single dal — which is exactly why the tradition exists in the first place, long before anyone described it that way.

Unpolished, like the rest of our dal

Most dal on the Indian market is polished — with water, with oil, sometimes with talc or added colour — to look glossy and uniform in the bag. It's cosmetic, and it strips part of the outer layer.

Ours isn't polished. It looks a little more matte and a little less perfectly uniform. That's the point.

Cooking note: rinse well and soak 4–6 hours — the mix contains both fast-cooking and slow-cooking lentils, so soaking matters more here than with a single dal. Pressure-cook 1 cup dal with 3½ cups water for 4–5 whistles. Salt after cooking, not before.
